Okay, everyone has a recipe for mac and cheese, and this is mine.
- 1.5 cups of uncooked macaroni
- 1.5 cups of milk
- 2 tablespoons butter
- 1 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 teaspoon of mustard
- 1/3 cup sour cream
- 2 cups cheese (cheddar, swiss, colby, whatever you have on hand)
- 1/4 cup fine bread crumbs

Cook the macaroni till al dente. While doing that, melt the butter in a nice skillet. Add to the melted butter: flour, salt, pepper and mustard. Use a whisk to mix.

Set a timer for 15 minutes. While on a medium heat, slowly add the milk. About 1/4 cup at a time, making sure it is well mixed. Stir the mixture like you would a béchamel sauce. It takes nearly 15 minutes before it becomes thick.

Once the sauce is thick, add 1.5 cups of cheese and all the sour cream. Mix together until cheese is melted.

Mix the cheese sauce with the macaroni, and put into a greased 2 quart casserole dish. Top with the remaining half cup of cheese, and then the bread crumbs. I then take my cooking spray and gently coat the bread crumbs. This makes it them turn out crispy.

Bake at 350 degrees for 25 minutes.

Today we enjoyed it with corn bread muffins.
