Wags

I went to Walgreen's tonight. Nothing overly exciting. I picked up 3 bottles of Gatorade for $3. Stuff is nice to have on hand for all sorts of stomach illness emergencies. I bought a thing of Axe conditioner, free after rebate. I also picked up a tube of toothpaste (I know, I know), and made a profit of $1 on it. I just have to remember to use my register rewards now!

Chicken Spinach Lasagna

This is a crazy recipe, but it is good! I adapted it from Redbook or Good Housekeeping, or something like that...

  • 1(10-oz.) frozen spinach,thawed and drained
  • 2c cooked chicken,shredded
  • 2c grated cheddar cheese
  • 1Tbs cornstarch
  • 1/2tsp salt
  • 1/4tsp black pepper
  • 1Tbs soy sauce
  • 1(10oz) can cream of mushroom soup
  • 1c sour cream
  • 1(41/2oz)jar sliced mushrooms,drained
  • 1/3c mayonnaise
  • 6 lasagna noodles,cooked
  • 1c grated parmesan cheese
  • 1c chopped pecans

  • Preheat oven to 350. In a large bowl, combine spinach, chicken, cheddar cheese, onions, cornstarch, salt, pepper, soy sauce, soup, sour cream, mushrooms and mayonnaise. Put a layer of noodles in bottom of greased 9x13" lasagna pan. Spread half of spinach mixture over noodles. Place another layer of noodles on top and cover with remaining spinach mixture. Sprinkle Parmesan cheese, then pecans on top and bake for 1 hour.
For the chicken, what I normally do is the dinner the day before I roast up a whole chicken, then save the leftovers. Yumm....whole chicken. John said the whole chicken tasted better than Sammy's Pizza's chicken. That is quite the compliment!

Brown Butter Toffee Blondies

Holy smokes. Yummie. Very good. Bake time said 35 to 40 minutes, mine was done at 32 minutes. Also, there was no salt in this, seems like a bit could be added.

This is the first time I've ever (purposely) made brown butter. AKA beurre noisette. Simply, heat butter on stove over medium heat. And burn it. Kind of. I used a black bottom pot, next time I'll use a silver bottom, to see when the butter is starting to turn a nice golden brown. Once it began to change, I set the pot into icy water. Not too deep, you can't get water in your butter!

Check it for yourself.

Another....

I bought some more today, thanks for the coupons Kari!!!

Stuff for my stinky cat.
3 more Renuzit Triscents, orginally $7.99, sale $5, final price of $1 each.
3 more Glade Carpet Sprinkles, orginally $2.39, sale $1.50, final price FREE.

You do have to pay sales tax on these items. The sales tax is calculated off whatever the marked "price" is. The orginal price, or if it's on sale, the sale price. Keep that in mind, because even thought it's "free" I still have to pay 9.75 cents per sprinkle, and 32.5 cents per Triscent.

So, the point is, remember the tax. Don't go to the store without money, you still need to pay the tax on free items!
